The TRACOD project proposes to use model-based systems engineering (MBSE), conceptual modeling, massive on-line open course (MOOC), and Near-Infra-Red (NIR) spectroscopy for both food innovation and education. Technologically, we shall model the function, structure, and behavior of the entre fresh fish value chain – initially Icelandic cod and later other fish from additional locations, enabling real-time, transparent inspection of critical nutrition and condition parameters along the food chain through their digital twins, as reported by IRI, time, and location sensors using a blockchain-based mobile.

The benefit of TRACOD is to transparently expose all the stakeholders in the food chain, from the fishermen ships and food engineers to the customers, to the sources and paths of the food they handle or ultimately consume, including its macronutrients’ levels and freshness parameters, thereby boosting consumers’ confidence and raising their awareness to consuming healthy, balanced food.
